Guide Review - Salts, Fine French Cuisine in Cambridge

To celebrate my birthday, my partner and I decided to try Salts, a high-end Cambridge restaurant we'd heard much buzz about but hadn't yet visited. Salts was out of its signature roasted duck ($65 for 2 people) that evening, so we decided to order the Tasting Menu: five courses including 2 appetizers, 2 entrees, and a dessert, priced at $70 per person. The chef selects the dishes with the customers' input in case there is a particular selection they want to sample.

The first series of courses yielded an amuse bouche of white gazpacho soup, creamy and bursting with flavor from the pureed beans and pistachio; a gorgeous heirloom tomato salad served with tomato sorbet; and a piece of sturgeon wrapped in ham topped with frisee and tomato. All were outstanding.

Entrees included Chicken Ballotine, a mousse made from chicken breast meat wrapped in a piece of boneless chicken leg meat, which was possibly the juiciest chicken I've ever tasted; the sides of pureed white bean, foie gras, and apricot sauce only enhanced the experience. Second course was a tasty pork tenderloin confit.

Dessert was an indulgent affair consisting of, as our waiter joked, a pre-dessert, dessert, and post dessert. To start, we had two mini Spanish churros with an apricot parfait, a perfect combination of crunchy sweet and fruity tang. Next was an amazing chocolate dessert called "Torchon de Chocolat," which was so good neither of us could talk while we ate it. Finally, we finished with fresh raspberries served with nasturtium sorbet, a light and refreshing end to an evening of decadence.

Salts deserves all the recognition it has received. We were given friendly service, shared a nice Pinot Gris, and overall had one of the most memorable dining experiences we've had in Boston. The entire dinner took three hours, but the time flew by and we left feeling utterly content.
